Honey, in some cultures, is considered an immortality elixir. Ginger, once considered magical, has long been known for its health benefits. It only seems fair, then, to say Four Saints’ Honey Ginger Pale Ale is (allegedly) good for you. Our traditional English Pale Ale – brewed with pale malts, Kent Golding hops, and British yeast – is fortified with local honey and candied ginger. Dry hopped with more Kent Goldings, an aromatherapy quality is added to an already complex concoction. To your health!
Origin: When we decided to try our hand at English pale ale we wanted to do something, well, different. Honey sprang into our conversation during a brainstorming session while discussing possible local ingredients. It so happens Andrew, along with being a tremendous brewer, has also dabbled (exceptionally) in the art of mead, which is fermented honey and a favored drink in many ancient cultures. Ginger came along to add something extra since the honey sugar flavor would ferment out.
We expected a spike in the ABV, but did not anticipate the super spike we encountered. We worried such a high ABV would create a beer that might be too bold to put into regular rotation. We were wrong. The smoothness of this beer was another unanticipated result that allows it to sit in the current year round stable.
